    I love potatoes of all kinds but onion flavored oven roasted potatoes are one of my favorites. They are easy to make but take about an hour to cook. This doesn’t usually work  for me since I am not good at planning ahead. But occasionally I do think ahead enough to cook these for supper. They are inexpensive, easy and oh so tasty! I usually like to use russet potatoes for roasting and baking.     I bought a hash brown meal kit once and we liked it okay, but I figured I could make it healthier and taste better. I did and only used 3 ingredients plus salt and pepper. The kit used dehydrated potatoes that I had to add water to rehydrate and a powdered cheese sauce that had to be mixed up. I decided to use frozen hash browns, ground beef and Velvetta cheese.     Too Many Baked Potatoes?

    Have you ever cooked too many baked potatoes?  I had a couple large ones left over when my husband and son didn’t come home for supper one night.  This is why planning meals ahead of time doesn’t work well for our family.  I never know who is going to be home for supper each night.  I hate wasting food, so I put them in the fridge after they cooled.  The next morning I peeled them and cut them up into chunks about 1/2” square.  I fried up a 1 pound roll of sausage, six slices and the rest scrambled.  I pulled out the slices and added some oil, the potato…
