Little Hamburgers in Gravy

This is an easy 3 ingredient main dish.  We have been making them for years.  I don’t remember where we got the recipe, but it is a family favorite.  We make it every month or so.  I don’t know what the real name should be, but we call it little hamburgers in gravy because that is what they look like.  I assume one of the kids probably gave them the name and it stuck.  It can even be made ahead of time and just finished off quickly when you are ready by making the gravy and heating the little hamburgers before serving.  If making ahead of time, spread the patties out on plates and allow to cool completely before placing in a freezer bag.  They can be refrigerated for a few days if you plan to have them later that week, or frozen if you want to save longer.  If frozen, allow the patties to thaw before reheating.  The patties can be reheated in the pan with the gravy or in a slow cooker.

We usually serve them with mashed potatoes, but they could be served with rice or noodles if preferred.  We usually use 2-3 lbs of ground chuck.  Ground chuck or 80% lean ground beef is what I usually buy.  The leaner versions tend to cook up too dry and the fattier ones just seem to cook away.  I place the ground beef  in a large bowl and add 1 package of Lipton Onion Soup Mix.

I mix the soup mix into the hamburger meat and then make small hamburger patties.  The size really doesn’t matter, but we prefer ours to be about 1 1/2 – 2″ across.  They will shrink a little when cooking.  The 2 1/2 lb package that I used made about 30 patties.  You could also make them into round meatballs if preferred.

I place the patties in a skillet and cook over medium heat flipping once to brown each side.  Once cooked, I place them in a serving bowl and set aside while I make the gravy.

I make 3 packages of brown gravy so that it will cover the patties and we like to have a little extra gravy to serve over the potatoes.  The most important thing about making the gravy is starting with cold water and adding the gravy mix before cooking it.

Each package uses 1 cup of water, so I place 3 cups in a pan, add the gravy mix and then stir over medium heat until it comes to a boil.  Reduce the heat and continue to stir for a couple of minutes.  The gravy will thicken upon standing.

Once the gravy is ready, I pour it over the little hamburgers and serve.  It is an easy and quick recipe that fills up my family.  It is like old time comfort food, but fits our fast paced lifestyle today.

Ingredients

2 1/2 lbs ground beef

1 envelope onion soup mix

3 packages of brown gravy mix

3 cups water

Mix the onion soup mix into the ground beef.  Make little hamburger patties about 1 1/2-2″ across.  Makes about 30 patties.  Place in skillet and cook on medium heat until done, flipping once.  Placed cooked patties into a bowl and set aside.  Place 3 cups of cold water in a pan, add gravy mix and stir over medium heat until it comes to a boil.  Reduce the heat and continue to stir for a couple of minutes.  The gravy will thicken upon standing.  Pour over little hambuger patties and serve.
