Skillet Onion Potatoes

I love potatoes.  I love them fried, stewed, roasted, baked, mashed, and almost any way imaginable.  If I had to pick one item to eat for the rest of my life, it would have to be potatoes.  I cook some kind of potatoes for almost every meal.  The potatoes are as important to me as the main dish, sometimes they are the main dish.  I am fine with a loaded baked potato for a meal, but my husband thinks he needs  at least 4-5 different items for each meal.  I was craving my roasted onion potatoes the other day but didn’t want to wait the hour it would take to bake them.  I decided to try to get the same flavor and taste quicker.  I had some red potatoes and I cut them up in chunks about 3/4″ in size.

I placed them in a non-stick skillet with a little oil, salt, pepper and onion salt.  I didn’t have any fresh onion so I used onion salt, you could use fresh onion or onion powder if you preferred.

I covered the skillet and cooked them on medium high heat stirring occasionally until they were tender and browned.

They were really good.  They didn’t taste exactly like my roasted onion potatoes, but were a pretty good substitute.

Skillet Onion Potatoes

Ingredients

3 lb potatoes

2 tbls oil

1 tsp salt

1/2 tsp pepper

1/2 tsp onion salt

Cut potatoes up into chunks about 3/4″ in size.  Heat oil in a skillet then add the potatoes and seasonings.  Cook on medium heat until the potatoes are cooked through and the chunks have browned, stirring occasionally to prevent burning.

These are great with Baked Chicken and Corn Casserole.
