Little Homemade Cake

My mom has been making this cake as long as I can remember. When I was a kid, she had a huge garden. She grew enough food to feed us all summer, can or freeze enough for all winter and still had enough left over to sell to make a little extra money. One of the items she grew in huge amounts was strawberries. We loved them, and ate them all kinds of ways, but one of our favorite ways was mashed and spooned over the top of her little homemade cake.

It is a smaller recipe that mom always made in a square pan. We liked it best warm so she didn’t want a lot left over. We usually want a larger cake, so we just double the recipe and make in a 9×13 cake pan. This time we wanted just enough for us and didn’t have a square pan so we used a round one. It didn’t run over but it was completely full once cooked.

My kids have always loved to help mom cook and now my daughter loves to make the little homemade cake. She has made it into cupcakes, the large cake and this time a round one. We cooked it in the small toaster oven and it got a little darker brown on top than she would have preferred, but it tasted wonderful.

She started by measuring the shortening and putting it in the bowl.

Then she added the sugar.

She stirred them together and added the eggs.

After she had finished putting all the other ingredients she ended with the flour, adding it a little at a time.

It was a little lumpy so we used a whisk to get rid of most of the lumps.

She greased the pan and we poured the mixture in the pan.

After 25 minutes, she thought it was done, but when she checked with a toothpick, it came out gooey. She put it back in for another 10 minutes and this time it was done.

We let it set for about 5 minutes and then we cut it and spooned on some strawberries and topped with the whipped cream.

It was divine. One of the best simple little cakes I have ever had. It is wonderful how it soaks up the strawberry juice. My son won’t eat strawberries (can’t hardly believe he is mine some times) and he likes to just eat it plain. My husband likes to add ice cream to his cake and strawberries. So many ways to enjoy a quick and simple dessert. I need to try it with the sweetened peaches next time I make them.

Ingredients

1 cup sugar

2 cups flour

1/2 cup shortening

2 eggs

1 tsp baking powder

dash of salt

1 tbls vanilla flavoring

1 cup milk

Preheat oven to 375 degrees and grease a square cake pan. Place shortening and sugar in a large bowl and mix to combine. Add eggs and other wet ingredients, stirring until all mixed. Slowly stir in flour and baking powder, whisking if needed to get rid of the lumps. Pour in pan and cook for 30-35 minutes or until toothpick comes out clean. Slice, serve and enjoy!
