Easy Sweetened Peaches

I am in LOVE! In love with fresh peaches! We went to my best friend’s house for supper last week. We had a great meal, but dessert was the winner that day. She had made a red velvet cake the day before and when she went to move it, the lid came off and it fell face forward on the floor. They were able to save a small portion that didn’t hit the floor. She was so upset and blamed her husband as he was the one who put the lid on the carrier. Her mom had given her some peaches, so she cut them up and sweetened them since there wasn;t much cake left. I had done the same with strawberries.

I washed capped a 2 lb package of strawberries, washed them and set them to dry that morning. My daughter was going to make my mom’s recipe for Little White Cake  for the strawberries, but she never got around to it so, I just sliced and sugared the strawberries. But back to the peaches, my husband loved them. I ate the strawberries that day and didn’t taste the peaches because I don’t like fresh peaches. I am very picky and only eat canned peaches or cooked ones, like in a cobbler.

When I went shopping for groceries, I picked up 3 peaches to make some for my husband since he had made such a big deal out of how good they were. My daughter ate one so I only had 2 left when I got around to trying it. My daughter wanted to do it so I let her and just took the pictures. She cut the peach in half around the pit and twisted it open.

Then she peeled the skin off and popped out the pit. It comes off pretty easy, sometimes in small strips and other times large pieces.

I showed her how to slice the peach like I do, but she said the peach was too slippery to hold and slice. She did better slicing the peach halves on the cutting board.

Once all the peaches were sliced, we added 1/3 cup of sugar and stirred it until all the peaches were coated well.

Then I just put the bowl in the refrigerator and let the sugar dissolve. I checked them after an hour and the sugar was dissolved but the peaches were still pretty firm. After 4 hours they were getting soft and the flavor was wonderful. I let them set overnight and this morning they were even better. They were soft like canned peaches but had the most wonderful fresh flavor. Shaylee thought they were mushy this morning but I didn’t. If you like a firmer peach, limit the amount of time that you let the peaches sit before serving.

Mine sat for about 16 hours and made a lot of juice. I think they would have been great over some cake or ice cream or topped with whipped cream, but they didn’t last long enough to find out this time. I will be making this again and will try it over the Little White Cake. I will have to buy more peaches next time so maybe my husband will get more than a couple of bites.

Ingredients

Cut the peaches around the pit and twist to open. Pull the peel off and remove the pit from each peach. Cut the peach halves into slices or chunks and put in a bowl. Sprinkle sugar over the peaches. I used 1/3 cup for two large peaches, you could probably get by with less if you don’t want a lot of juice. Adjust the amount of sugar to account for extra peaches, but not in a equal amount. You will need more sugar but I wouldn’t double the recipe – I would use 1/2 cup for 4 peaches, 1 cup for 12 peaches, etc… and you can add more sugar later if you don’t get enough the first time.
