Easy Strawberry Cheesecake Pie

I have been making these cheesecake pies for a long time.  I don’t really remember where the recipe came from, but as you know by now, I don’t usually follow a recipe exactly.  The original recipe didn’t call for any extras and the regular is okay, but I like to add in extra textures and flavors to change it up.

I have made several different versions over the years, Oreo with an Oreo crust is my son’s favorite, but the strawberry is mine and my daughter’s favorite.  A few other versions I have made include pineapple, lemon, Butterfinger in a chocolate crust, and chocolate chip in a chocolate crust.

I love how quick and easy this is to fix and doesn’t require any cooking.  This makes for a great summertime recipe, because here in Arkansas we try not to use the oven during the summer because it heats the house up too much.  This is a light and fluffy version of a cheesecake so don’t expect it to taste or feel like a traditional cooked cheesecake.

I start by dicing up the strawberries into about 1/4″ pieces.

I soften a package of cream cheese, then stir in 2/3 cup of sugar, the original recipe calls for 1/2 cup, but since I am adding fresh strawberries, it needs a little extra sugar.  Then I fold in a thawed package of frozen whipped topping.  It is very fluffy and will set pretty quickly once the topping is stirred in, that is why I make sure to have the strawberries cut up and ready before I mix up my cheesecake filling.   I don’t usually measure the strawberries, but did this time and I had about 1 cup of diced strawberries.

I just dump the strawberries in and stir up and pour into a graham cracker crust.

Once all mixed up, the filling is thick and I use the back of the spoon to make swirls in the top.  This is not necessary but does make it a look a little fancier.  I cut some small strawberries in half to decorate the top.  I then put the top on it and chill in the fridge for at least 3-4 hours.  This is a great recipe that can be made the day before.  Just make sure to keep it in the fridge until you are ready to serve.

Ingredients

1 lb fresh strawberries, divided

1 8 oz package of cream cheese, softened

2/3 cup sugar

1 8 oz package of frozen whipped topping, thawed

1 6 oz graham cracker crust

Dice up strawberries into about 1/4″ pieces until you have about 1 cup diced.  Set a few small strawberries aside to decorate the top.  Place softened cream cheese in large bowl, stir until smooth.  Add sugar, stirring until combined.  Fold in whipped topping, then add in diced strawberries.  Pour in graham cracker pan and smooth to the edges, top with strawberry halves if you wish.  Cover and chill in refrigerator at least 3-4 hours.  Slice and serve.
