Too Many Baked Potatoes?

Have you ever cooked too many baked potatoes?  I had a couple large ones left over when my husband and son didn’t come home for supper one night.  This is why planning meals ahead of time doesn’t work well for our family.  I never know who is going to be home for supper each night.  I hate wasting food, so I put them in the fridge after they cooled.  The next morning I peeled them and cut them up into chunks about 1/2” square.  I fried up a 1 pound roll of sausage, six slices and the rest scrambled.  I pulled out the slices and added some oil, the potato chunks, salt and pepper.  I covered the pan and allowed them to cook until the potatoes were soft and browned, stirring occasionally.

While they were cooking, I broke 12 eggs into a bowl, added salt and pepper and beat until scrambled.  Once the potatoes were soft and somewhat crispy, I pushed them to one side and added the eggs.  I used a large non-stick Deep Skillet, mine is 12″ wide and 3″ deep.  I love this skillet, I found it at a outlet store when we were on vacation last year.  It is great for our family, I even take it on vacation with us because the skillets provided at the resorts are not large enough for our family.  I can make large batches of gravy, Alfredo sauce and other items that I prefer to use a non-stick skillet for, but need more room than the regular ones.  I have a glass lid that came with one of my first large skillets years ago, the skillet is long gone, but I have been able to use the lid with all my 12″ skillets over the years.

I cooked the eggs and then stirred them into the potatoes and sausage and served.  It was good but there are a couple of things I will change next time.  I will take the scrambled sausage out once it is cooked and add it back in once the potatoes and eggs are cooked.   The sausage was a little dry since it cooked so long and we decided that it would have been better with cheese as cheese makes most everything better.  We like Velveeta in things like this, but any type of cheese that melts well would probably be fine.  Otherwise, it was a hit with my family.  Hope it is with yours as well.

Home Fries and Sausage Scramble

Ingredients

2 large baked potatoes, cold

1/2 lb sausage

12 eggs

2-4 tbls oil

salt

pepper

4-8 oz cheese (optional)

Place sausage in large skillet, scramble until cooked through.  While sausage is cooking, peel and cut potatoes into 1/2” chunks.  Remove sausage from pan and set aside.  Leave sausage grease in pan for flavor, add oil and potatoes, salt and pepper to taste. Cover and cook on medium, stirring occasionally until the potatoes are soft and somewhat crispy.

Break eggs into a bowl, salt and pepper to taste, beat with fork to scramble. Push potatoes to one side of the pan and pour in eggs, stir until eggs are cooked through.  Add sausage back in mixing into eggs and potatoes.  It is ready to serve if you are not using cheese.  If you are, add your favorite cheese and cover, allow to melt and serve hot.
