Cheeseburger Hash Brown Skillet Meal

I bought a hash brown meal kit once and we liked it okay, but I figured I could make it healthier and taste better. I did and only used 3 ingredients plus salt and pepper. The kit used dehydrated potatoes that I had to add water to rehydrate and a powdered cheese sauce that had to be mixed up. I decided to use frozen hash browns, ground beef and Velvetta cheese. Not only is it better, it is even easier than making the kit version. My husband and I love this cheeseburger hash brown skillet meal.

Since I almost always have my ground meat already cooked and frozen ready to use, I start by heating a little oil in a large non-stick skillet. Then I pour a package of frozen shredded hash browns in and add salt and pepper. I stir the hash browns to coat all shreds with the oil, salt and pepper, pat them down flat and cover. I let the hash browns cook until the bottom is brown and then turn over and repeat until the they are browned and cooked through.

Once the hash browns are cooked through, I sprinkle the hamburger meat over the top, add the cheese and cover to allow the cheese to melt. We prefer using Velvetta, but any type of cheese you prefer will work as long as it melts well.

After the cheese is melted, it is ready to serve. Sometime I serve it by itself and other times I pair with veggies or a salad for a more complete meal.

We like this easy basic recipe, but it would be easy to add onion, garlic, peppers, veggies, or whatever spices you like. Just saute any other ingredients in the oil before adding the hash browns to the pan. I like recipes that are simple because they can be adapted to fit different tastes and you could make a different version of this dish everyday just by changing up what you add to it.

Cheeseburger Hash Brown Skillet Meal

Ingredients

1 package of frozen shredded hash browns

1 lb ground beef

8 oz of cheese

Place the ground beef in a large skillet, cook it until it is done, breaking it into small pieces. Drain the grease off the hamburger meat, reserving a couple of tablespoons to use to cook the hash browns. Set the cooked ground meat aside, return reserved grease to the pan and add the frozen hash brown. Salt and pepper to taste, stirring to coat the potatoes.

Flatten the hash browns out and cover, allow to cook about 10 minutes or until bottom is browned, flip potatoes and repeat until the hash browns are cooked through. Spread the hamburger meat and cheese over the top of the potatoes, cover and allow cheese to melt. Once the cheese is melted, it is ready to serve.
