Strawberry or Chocolate Chip Banana Muffins

My family loves bananas and they usually disappear before I have a chance to make anything out of them. My husband absolutely loves banana pudding and would love it if I made one every week. I bought some extra bananas so I could make him one. We had some extra things come up and we weren’t home much and I didn’t get a chance to made the pudding, so we ended up with some pretty overripe bananas that no one would eat.

Once they get that ripe, banana bread is one of the best ways to use them. I love banana bread, but my husband doesn’t really care for it so I decided to try making strawberry banana muffins for breakfast. We all love strawberries except for my son doesn’t eat strawberries, I decided to make half the recipe with strawberries and the other half chocolate chip banana muffins for him.

I mixed a softened stick of butter with sugar and mixed in the eggs and bananas.

Then I added the flour, baking soda, and salt.

I put half the batter into another bowl and added strawberries to one half and chocolate chips to the other half.

Then I put Cupcake Liners in the Muffin Pan and dropped a large spoonful in each muffin liner. I didn’t take into account that the strawberries would take up a larger volume than the chocolate chips. I ended up with 13 strawberry and 10 chocolate chip muffins.

We didn’t like the strawberry banana muffins as much as I thought we would. They were okay the first day, but I actually liked them better the second morning. Both versions were very moist.

I didn’t eat any of the chocolate chip banana muffins, but they all really liked them and would have eaten more if I had them. I will be definitely be making the chocolate chip banana muffins again.

Chocolate Chip Banana Muffins

Strawberry or Chocolate Banana Muffins

Ingredients

1 stick butter (softened)

1 cup sugar

2 eggs

3 ripe bananas (mashed)

2 cups flour

1 tsp baking soda

1/2 tsp salt

1 1/2 cups fresh strawberries chopped and tossed  in 1 tbls flour

or

1 cup chocolate chips

Preheat the oven to 350 degrees. Mix the butter and sugar together, add in the eggs and bananas stirring until it is well blended. Mix the flour, baking soda and salt together and add to the wet ingredients stirring just until combined. If making the strawberry version toss strawberries with flour and fold in to batter or mix in chocolate chips. Place Cupcake Liners in Muffin Pan and fill with heaping tablespoon of batter. Bake for 12-15 minutes until toothpick comes out clean.
