    Too Many Baked Potatoes?

    Have you ever cooked too many baked potatoes?  I had a couple large ones left over when my husband and son didn’t come home for supper one night.  This is why planning meals ahead of time doesn’t work well for our family.  I never know who is going to be home for supper each night.  I hate wasting food, so I put them in the fridge after they cooled.  The next morning I peeled them and cut them up into chunks about 1/2” square.  I fried up a 1 pound roll of sausage, six slices and the rest scrambled.  I pulled out the slices and added some oil, the potato…

    Can Baked Chicken be Juicy?

    I don’t like to fry foods very often.  Not only is it less healthy, but it makes a big mess in my kitchen.  The problem with this is that my husband loves fried food especially fried chicken.  I have tried cooking chicken in all sorts of ways over the years, but he really never liked them all that much.  Another problem is that he likes dark meat and I like white meat, so over the last few years I have been experimenting with different chicken recipes for thighs and legs and I would just throw a breast in for me.  Some would be okay but nothing he really liked much…
