Easy Oven Roasted Potatoes

I love potatoes of all kinds but onion flavored oven roasted potatoes are one of my favorites. They are easy to make but take about an hour to cook. This doesn’t usually work  for me since I am not good at planning ahead. But occasionally I do think ahead enough to cook these for supper. They are inexpensive, easy and oh so tasty!

I usually like to use russet potatoes for roasting and baking. If I am feeding the entire family, I make a large pan of potatoes (probably about 10 medium-large potatoes),  but only use about 5-6 potatoes if it is just the 3 of us. I cut the potatoes into chunks and put in a bag, pour a little oil over them, and shake them up coating the potatoes with the oil. Then I sprinkle a package of onion soup mix over the potatoes and shake again. Once the potatoes are coated in the onion mix, I pour them on an oiled pan.

I spread them out evenly and I like to try to make sure the side with the peel is on the bottom because they seem to stick less that way. We like a lot of flavor, so I usually sprinkle some salt, pepper and onion salt over the top then cover with foil and put in the oven for about 45 minutes. I have cooked them without the foil but they get pretty crispy and my husband doesn’t like that.

After the 45 minutes, I remove the foil and put back in the oven for the last 15 minutes or until the potatoes are cooked completely and as brown as I want them.

Sometimes they stick to the pan, so I use a metal spatula to loosen them from the pan and serve. I like to dip mine in ketchup, the guys dip in barbecue sauce, but you can dip in your favorite sauce or none at all. This is one of my favorite sides to go with meatloaf or baked chicken. This time we had them with barbecue chicken sandwiches.

Easy Oven Roasted Potatoes

Ingredients

6-10 medium size potatoes

1 envelope onion soup mix

2 tbsp oil

salt, pepper and onion salt to taste (optional)

Cut potatoes up in chunks, place in plastic bag, pour oil over potatoes and shake. Sprinkle onion soup mix over the potatoes and shake to coat, pour onto large greased baking pan. Even potatoes out into one layer, add some salt, pepper and onion salt for extra flavoring if you wish. Cover pan with foil and place in preheated 400 degree oven for 45 minutes. Remove from oven, take off foil and replace in oven for additional 15 minutes or until the potatoes are cooked through and browned. Once the potatoes are cooked, remove from the oven, loosen from pan and serve immediately.
