Cheesy Eggs and Ham
My husband loves eggs, almost any kind. I like making cheesy eggs and ham because I can make them for one, two or the entire family all at once and they are oh, so good. I fix 2-3 eggs per person, depending on what else I am going to serve with them. Sometimes I fix home fries or hash browns, other times just toast.
Start by getting everything ready. The eggs are the last thing you want to cook. They are quick and easy and only take a few minutes to prepare. Break the eggs into a bowl and add salt and pepper.
I like to use Land of Frost thin ham and Velvetta in ours, but you could use your favorite ham or cheese. I have even used sausage or bacon instead of ham, but ham is our favorite. Once I have the ham torn up and the cheese cut in little cubes, then I am ready to start.
I whip the eggs up, adding the ham and mix through the eggs.
I always use a non-stick skillet when I cook eggs, it allows me to use less oil and they don’t stick. Put a little oil in the pan and allow to heat up before pouring in the eggs/ham mixture.
The eggs cook best when they are touching the pan, so I start by raking the cooked edges toward the middle allowing the raw egg to run back down in the open area. Once most of the eggs are cooked, I flip them over to finish cooking the top part.
I start breaking the eggs up and stirring them until they are all cooked.
Then I place the cheese over the top and cover. I then turn off the burner and allow the cheese to melt.
Once the cheese is melted, it is ready.
Place on plate and serve immediately.
Cheesy Eggs and Ham
Ingredients
2-3 eggs per person
4 slices of thin ham per person
1 thin slice of Velvetta per person
salt and pepper to taste
1-2 tbsp of oil
Break eggs into a bowl, add salt and pepper. Tear up ham and cut up cheese. Whip eggs and add ham. Pour the oil into a skillet and allow to heat. Once the skillet and oil are hot, pour the egg and ham mixture into the pan. Using a spatula, scrape the cooked egg toward the center allowing the raw egg to take its place. Once most of the egg is cooked, flip over and break up to allow all the egg to cook. Top with the cheese cubes and cover. Turn off heat under the burner and allow the cheese to melt. Once the cheese is melted, serve the cheesy eggs and ham immediately.
