Yummy Fruit Salad
My husband loves Chinese food, but I can’t stand it. I have tried going to different restaurants several times over the years to please him. On one of these trips, there was very little that I would eat, but there was a simple fruit salad. That is pretty much what I ate that night. It was sweet but very lightly sweet and I wanted to recreate that taste.
I came up with a very simple recipe that has been a huge hit at every event I have ever taken it to. It is great for summer barbecues, Christmas parties, baby showers, weddings, or any other type of get together. The sweetness comes from the heavy syrup in the can of peaches, so make sure that you buy the ones with heavy syrup, not juice. My favorite fruit combination is peaches, pineapple chunks, strawberries, and white grapes.
Any combination of your favorite fruit will work if you are eating it right away. The last time I made it, I didn’t have any grapes so I used bananas instead. They work great when you are eating it right away, but by the next day, they start to get mushy. Apples tend to do this as well and sometimes turn pink from the strawberries after a couple of days. I have used red grapes when I didn’t have strawberries for the color.
It is very easy to put together. Start by opening up a large can of peaches and pour them in a large serving bowl. I cut them in half to make bite size chunks.
After capping and washing the strawberries, then I cut them in quarters and add them to the peaches.
I cut the bananas in half lengthwise and then into about 1 inch long pieces.
I drained the juice off the pineapple chunks and tossed them in with all the rest of the fruit pieces.
The bananas will turn brown if they are left to the air so I push them down into the juice until I am ready to serve. I have done this when I have put apples in the fruit salad as well.
When you are ready to serve, stir the fruit to make it look pretty. It makes a very pretty dessert with all the different colors. If you wanted to make it even fancier, you could add a spoonful of Easy Sweetened Whipped Cream to the top of each serving.
Yummy Fruit Salad
Ingredients
29 oz can peach slices in heavy syrup
20 oz can pineapple chunks in juice
1 lb fresh strawberries
2-3 bananas
Put peach slices and syrup in a large serving bowl, cut them in half to create bite sized pieces. Drain the juice off pineapple and add to the bowl. Cap, wash and quarter strawberries and add to bowl. Cut the bananas lengthwise and into chunks and stir into the rest of the fruit making sure to coat them well with the juice to help prevent browning. Chill for at least 3-4 hours before serving. Any of these fruits can be substituted for your favorite fruits except for the peaches since that provides the lightly sweet syrup for the salad.
